Sinaloa-style Aguachile

Ingredients:

  • 500 g raw shrimp, 1 cup lime juice, 2-3 serrano peppers, 1 cucumber, 1/2 red onion, 1/4 cup fresh cilantro, 1 avocado, Salt to taste, 1 teaspoon Worcestershire sauce, Tostadas or saltine crackers

Preparation:

  1. Clean and devein the shrimp. If desired, butterfly them by cutting them in half lengthwise.
  2. Blend the lime juice, serrano peppers, cilantro, salt, and Worcestershire sauce (if using).
  3. Pour the mixture over the shrimp and refrigerate for 10-15 minutes.
  4. Add the cucumber, red onion, and avocado (if using). Gently mix.
  5. Serve immediately with tostadas or saltine crackers.

Guacamole

Ingredients:

  • 3 avocados, 1 tomato, 1 onion, 1 serrano chili, 1 lime, cilantro, salt to taste

Preparation:

  1. Mash the avocados in a molcajete.
  2. Dice the tomato, onion, chili, and cilantro.
  3. Mix everything with lime juice and salt.
  4. Serve with tortilla chips.

Fish Ceviche

Ingredients:

  • 500 g of white fish fillet, 10 limes, 1 red onion, 2 tomatoes, 1 serrano chili, 1 avocado, cilantro, salt and pepper to taste

Preparation:

  1. Cut the fish into cubes and marinate in lime juice for 30 minutes.
  2. Mix with onion, tomato, chili, and cilantro.
  3. Serve with avocado and tostadas.

Green Enchiladas

Ingredients:

  • 500 g of chicken breast, 12 tortillas, 500 g of green tomatoes, 2 serrano chilies, 1 onion, 2 garlic cloves, 1 cup of cream, 200 g of fresh cheese, oil, salt to taste

Preparation:

  1. Cook the chicken and shred.
  2. Blend the tomatoes, chiles, onion and garlic.
  3. Fry the sauce in oil.
  4. Fill the tortillas with chicken.
  5. Drizzle the sauce over the tortillas.
  6. Serve with cream and cheese.

Ingredients:

  • 500 g of corn dough, 200 g of poblano peppers, 1 onion, 200 g of cheese, 1 cup of cream, 1 teaspoon of baking powder, corn husks, salt to taste

Preparation:

  1. Roast and slice the peppers into strips.
  2. Sauté with onion.
  3. Mix the dough with baking powder and salt.
  4. Fill the corn husks with dough, pepper strips, and cheese.
  5. Steam for 1 hour.
